The great promise of fast-casual is the food—and when it comes to food trends, local ingredients are all the rage. But how practical is it for a fast-casual chain to jump on board? Maybe moreso than you think. Just ask Grand Central Baking Co., which is living the local dream.

“Fine Dining Between Two Buns”

Pork belly. Smoked mayonnaise. Fries seasoned with fresh herbs after being cooked in a duck fat/lard/ peanut oil mix. Buns brushed with butter, rosemary, and garlic. Milkshakes flavored with white truffles and made with liquid nitrogen. Raisin ketchup. Sound like a fast-casual?

Concept Profile: Naked Chocolate Café

The European-style sit-down café and retail store has expanded to three locations that each serve 300 or more people daily. The brand’s most popular menu items by far are its hot drinking chocolates, which are available in classic, bittersweet, Aztec, and spicy. Coffee selections are also available.
