Breaking the 7 Unwritten Rules

How some operators succeed by going against the industry’s conventional wisdom.

Many college-bound students have one word on their minds: freedom. Restaurant operators associate another word with campus life: captivity.

And both groups are equally excited about it.

This year’s historic drought threatens to send food costs skyrocketing.

McAlister's Deli locked in turkey and bacon prices until the end of the year.
Turkey breast prices have increased by more than 21 percent in the last year and a half at Submarina California Subs.

It’s clear that one of the most severe droughts in the nation’s history will affect food costs, but just how much and exactly when still remain to be seen.

While restaurants have grown accustomed to absorbing food-price swings, operators say this summer’s drought may force them to pass on some of the burden to customers.
