The Modmarket at Denver International Airport is now open to travelers in the center of the B Concourse. The 900-square-foot restaurant is the first of two Modmarket locations at DIA, and the second is expected to open later this year on the C Concourse.
Colorado-based fast casual Modmarket rolled out its winter menu items today in all locations. The seasonal menu has a healthy, sustainable, and hearty intent with both new and returning entrees.
Soba noodles are a first for Modmarket and the base ingredient in the new Coconut Citrus Soba Noodle dish. The eatery is also using shiitake and crimini mushrooms to create savory pizza and salad winter options. And guest favorites Red Chicken Melt, Tomato Basil soup, and Cashew Butternut Squash soup are back in time for cool winter temperatures.

In 2008, Anthony Pigliacampo and Rob McColgan were two young professionals looking for a place to have a healthy lunch on a regular basis. When they couldn’t find one, the pair decided to create one. They pooled their knowledge to create Modmarket.
“We felt very strongly that there needed to be better options for healthy eating,” Pigliacampo says. “We thought there should be more than Chipotle and Whole Foods.”
Colorado-based farm fresh eatery Modmarket is set to open its second Texas location Monday, October 27 in Plano (8400 Preston Rd.) Plano is the second of four Modmarket locations opening in the Dallas area in February through March 2015. It joins the open location in Flower Mound, Texas, along with eight eateries in and around Denver, Colorado.
