Consider the spud. Sure, it’s often thought of as a simple, standard restaurant staple—and in the quick-service field often relegated to the side of the plate or presented in fried format—but it also can be the subject of inspiration and kitchen creativity. Potatoes are also a cost-effective comfort food open to culinary flair.
“Potatoes are among the best profit makers for restaurants,” says Susan Weller, global foodservice marketing manager at the U.S. Potato Board. “And there are so many options for potatoes on the menu.”
With the opening of Modmarket Preston Hollow Village, there are now three farm-fresh eateries in the Dallas area and 12 across Colorado and Texas. The newest location joins Modmarket Flower Mound (opened September 2014) and Modmarket Plano (opened October 2014) in Texas.
The Modmarket at Denver International Airport is now open to travelers in the center of the B Concourse. The 900-square-foot restaurant is the first of two Modmarket locations at DIA, and the second is expected to open later this year on the C Concourse.
Colorado-based fast casual Modmarket rolled out its winter menu items today in all locations. The seasonal menu has a healthy, sustainable, and hearty intent with both new and returning entrees.
Soba noodles are a first for Modmarket and the base ingredient in the new Coconut Citrus Soba Noodle dish. The eatery is also using shiitake and crimini mushrooms to create savory pizza and salad winter options. And guest favorites Red Chicken Melt, Tomato Basil soup, and Cashew Butternut Squash soup are back in time for cool winter temperatures.

It’s 2029 in Albany, New York—your average American city. A family of four stops by the corner sandwich shop for lunch, and the glass doors automatically slide open as they enter. A brand ambassador greets the family by name at the door, a tablet in her hand displaying the date and details of their last visit. She guides the family to an open table, fitting them each with a head-mounted display, which transforms the tabletop into an assembly line of fresh meats, cheeses, and vegetables.
In 2008, Anthony Pigliacampo and Rob McColgan were two young professionals looking for a place to have a healthy lunch on a regular basis. When they couldn’t find one, the pair decided to create one. They pooled their knowledge to create Modmarket.
“We felt very strongly that there needed to be better options for healthy eating,” Pigliacampo says. “We thought there should be more than Chipotle and Whole Foods.”
Colorado-based farm fresh eatery Modmarket is set to open its second Texas location Monday, October 27 in Plano (8400 Preston Rd.) Plano is the second of four Modmarket locations opening in the Dallas area in February through March 2015. It joins the open location in Flower Mound, Texas, along with eight eateries in and around Denver, Colorado.
