For a limited time only this summer, Bruegger’s is offering an Italian inspired salad to its bakeries- the Sun-Drenched Tomato and Bagel Salad. In the tradition of a panzanella or bread salad in Italy, the new menu item will add Bruegger’s Rosemary and Olive Oil bagel pieces to the salad.

The Sun-Drenched Tomato and Bagel Salad, available July and August in participating bakeries, will include tomatoes, roasted red peppers, lettuce, Asiago cheese, Bruegger’s Rosemary and Olive Oil bagels and a new sundried tomato vinaigrette dressing. Guests can also add grilled chicken.

“In Sienna, Italy, I learned firsthand how fresh-baked bread is used to add flavor to dishes like panzanella,” says Bruegger’s executive chef, Phillip Smith. “The addition of our authentic bagel adds a little fun.”

Like all Bruegger’s salads, the Sun-Drenched Tomato and Bagel salad is tossed to order. Guests can also make their own salad creation.

“We love bringing new menu items to the table for our guests to try,” says Bruegger’s CEO Jim Greco. “The Italian bagel salad is a perfect combination of a healthy offering with great flavors.”

The Sun-Drenched Tomato and Bagel Salad joins a growing menu that includes the company’s new line of sandwiches that were introduced in early 2009.
