Two local culinary masters have joined forces to introduce a new take on comfort Italian food. Salsarita’s founder, Bruce Willette and Johnson & Wales Chef on assignment, Peter Reinhart, have developed “Capishe! Bold Italian Kitchen,” a new fast casual concept that will bring Italian street food to market. Willette and Reinhart worked with Global Design Firm “Little” to create the new brand and restaurant concept.

 

The new restaurant is based on simple Italian foods, made fresh in front of customers by expert staff using high quality ingredients. Two signature sandwiches, the Boldini and the Foldini, will complement a variety of custom pizzas, pasta dishes, and fresh salads all cooked to perfection in 90 seconds. Capishe! will also offer a variety of custom Italian sodas, beer, wine, and traditional soft drinks. The flavor profiles created by Reinhart deliver rich, bold flavors through Italian dishes.

The new concept will have a warm and inviting urban interior with custom seating, making it a place to grab a lunch or sit down for a casual dinner with friends and family. Capishe! will open multiple locations in Charlotte this year as part of a local and regional expansion plan.
