Simply Southern Restaurant Group, the exclusive franchisor of Chicken Salad Chick, has added four new associates to support the concept’s growing number of restaurants across the Southeast. 

“We are pleased to add these strong professionals to our ranks,” says Kelley P. Mossburg, Simply Southern Restaurant Group president and CEO. “Our top priority is to ensure all of our restaurants provide our customers with the same experience as they would have here in Auburn and Opelika, and these associates will help us ensure we do so.” 

Fast-casual restaurant industry veteran Lowry Croxdale has been named director of operations with responsibilities for day-to-day operations for both company-owned and franchised stores. 

With more than 25 years of experience, Croxdale has served in various executive level roles spanning training, field operations, and franchise operations. He attended the University of South Carolina.

Kelly Schenck is the company’s new corporate franchise developer. A graduate of Auburn University, she spent her early years in her family’s multi-unit pizza company before she transitioned into foodservice sales with a leading food distributor. 

In her new role, Schenck will oversee vendor and franchisee relations and restaurant décor and build out.

Director of corporate training Cynthia Witt-Hopkins is a peak performance strategist with more than 30 years of experience in human resources, training and development, hotel and restaurant management, and executive recruiting. 

Her responsibility at Simply Southern Restaurant Group is to lead the training and talent development of Chicken Salad Chick staff. Witt-Hopkins attended West Virginia University.

Claudia Issiac has been named office manager and bookkeeper.  With more than 30 years of private industry experience, Issiac oversees office operations, policies, procedures, and capital resources.  She graduated from Auburn with a concentration in horticulture.
