Costa Vida Fresh Mexican Grill will celebrate Cinco de Mayo with the opening of its flagship location in Lehi, Utah. The 35th Costa Vida location in Utah will open its doors on Monday, May 5.

In celebration of the opening, Costa Vida will invite the local community to attend their grand opening and Cinco de Mayo event. An outdoor celebration will host live mariachi music, food samples, and entertainment. The first 25 guests in line on May 5 will receive on free entrée each week for one year. The next 25 guests in line will receive one free entrée each month for one year. Each guest will receive a free pork burrito from 11 a.m. to 1 p.m., and from 4–7 p.m.; children will be treated to a free meal.

“We’re looking forward to expanding in our home state of Utah,” says Sean Collins, CEO of Costa Vida Fresh Mexican Grill. “We’ve received a warm welcome here since the first location opened in 2003. We’ve expanded our brand across the U.S. and in new regions of the country, allowing us to share the fun, light-hearted atmosphere, and fresh, made-from-scratch food that Utah has enjoyed for years.”

Costa Vida’s menu is inspired by the local cuisine of the Baja Peninsula Coast and features made-to-order burritos, tacos, enchiladas, quesadillas, salads, and nachos. Protein choices include sweet pork, grilled chicken, shredded beef, raspberry chipotle chicken, grilled steak, chile verde, Mahi Mahi fish, and shrimp. Entrées are served with cilantro lime rice and black, refried, or pinto beans. Homemade guacamole, sauces, and salsas can be used to customize any order. Choices include Mango Salsa, Honey Habanero Salsa, Salsa Fresca and Pico de Gallo.

With the exception of the flour and wheat tortillas, tres leches, and key lime pie desserts, Costa Vida’s menu items are gluten friendly.
