Fazoli’s is so proud of its new Italian Melt sandwiches that it’s encouraging customers to “Yelp” about its Melts. The company wants customers to go to the popular consumer review website this month to provide feedback, good or bad. Then, at the end of July, it will report back on what people had to say. Of course, anyone can check out the reviews themselves to see if the melts are getting five stars from consumers.

The Italian Melt’s development was months in the making. Fazoli’s head of culinary development, Chef Darren Gray, experimented with a variety of ingredients before coming up with three featured sandwiches: Chicken Asiago, Sicilian Sausage, and Crispy Chicken Parma. Four different cheeses are used in the melts, including Asiago, Fontina, Mozzarella, and Provolone. Particularly challenging was finding the perfect flatbread for the melts, one with great flavor as well as texture, even after the sandwiches are baked.

Gray is proud of the end result of all the hard work.

“These are just fantastic sandwiches,” Gray says. “They each have unique flavor profiles, and the ingredients complement each other so nicely. So I really can’t wait to see what our guests have to say.”
