Colorado Pie LLC announced the grand opening of its first Pieology Pizzeria Colorado location. The California-based fast-casual restaurant is located in Lakewood near Colorado Mills mall. Colorado Pie is owned and operated by entrepreneurs Jeff Gordan and Jay Goldstein, who are known for their successful launch of Which Wich Superior Sandwiches in Colorado.
“Just in time for the new year and Super Bowl XLVIII, Pieology offers easy, fast, and delicious custom pizzas,” says Jeff Gordan, chief executive officer for Colorado Pie LLC. “Coloradoans can now build their own individualized pizza selected from a large selection of toppings, sauces and extras.”
Pieology offers more than 30 different topping choices at a fixed price, including sauces and after bakes options, which means hundreds of pizza combinations that can be tailor-made for each customer. Menu options include sauces such as herb butter, red sauce, or olive oil as well as a variety of cheese choices including Mozzarella, Ricotta, Parmesan, or Gorgonzola. Toppings include a range of meats such as chicken, sausage, or meatball to a variety of vegetables or unique items like jalapeno or pineapple. Pieology also offers “after bakes” that can be added after the pizza comes out of the oven such as roasted red peppers, dollops of red sauce, or pesto. Gluten-free crust is also available.
“Because we can make a pizza in under five minutes, we think it’s time to start enjoying pizza at lunch and dinner,” says Jay Goldstein, chief operating officer, Colorado Pie LLC. “Our Pieology ovens are high heat, artisan style with a regulated temperature to allow quick baking. We also train our ‘pieologists’ in the art of building the best pizza every time.”
Pieology’s energy efficient restaurants are not only comfortable, but also adhere to the corporate mission statement to “Be inspired to make a difference one pie at a time.” Additionally, Pieology pizza boxes are a PCW (post-consumer waste recycled) to reduce their carbon footprint.
