Colorado Pie LLC announced it will launch the first Pieology Pizzeria in the Denver area in January 2014. The successful California-based, fast-casual restaurant will offer easy, fast custom pizzas for Coloradoans just in time for the New Year. Colorado Pie LLC is owned and operated by entrepreneurs Jeff Gordan and Jay Goldstein, who are known for their successful launch of Which Wich Superior Sandwiches in Colorado.
“As a life-long fan of pizza, I’ve always wanted to bring the idea of customization and great ingredients into a quick casual environment,” says Jeff Gordan, chief executive officer of Colorado Pie LLC. “Pieology brings these two ideas together in a fun, relaxed atmosphere. We’re happy to have another customize-you-own concept coming to the Denver area.”
Pieology offers 30 different topping choices at a fixed price, including sauces and after-bake options, with more to come, which means hundreds of pizza combinations that can be tailor-made for each customer. Menu options include sauces such as herb butter, red sauce, or olive oil, as well as a variety of cheese choices including Mozzarella, Ricotta, Parmesan, or Gorgonzola. Toppings include a range for meats such as chicken, sausage, or meatball to a variety of vegetables or unique items like jalapeno or pineapple. Pieology also offers after bakes that can be added after the pizza comes out of the oven such as roasted red peppers, dollops of red sauce, or black pepper. Gluten-free crust is also available.
“It’s time we made pizza an option for lunch or dinner,” says Jay Goldstein, chief operating officer of Colorado Pie LLC. “Because of our quick-bake process, we can make any custom pizza quickly while keeping to our commitment to high quality, delicious food.”
Pieology’s quick-bake process makes hot pizza in under five minutes. Additionally, Pieology’s energy efficient restaurants are not only comfortable, but also adhere to the philosophies of our corporate mission statement to “Be inspired to make a difference one pie at a time.”
The first Colorado Pieology will open just outside Colorado Mills in Lakewood just off West Colfax Avenue. Colorado Pie intends to open 10 Pieology locations in the next five years across the Front Range.
