Since November of 2012, Rachel’s Kitchen in Las Vegas has opened four new locations, the newest of which is positioned in the McCarran International Airport D-Gates and is the collaboration of founder Debbie Sofer-Roxarzade and franchisee Kent Asaki. Asaki also owns two Rachel’s Kitchen full restaurants in the north Summerlin area, which opened in November 2012, and the northwest valley Centennial Hills location, which opened in mid 2013. The downtown Ogden location is booming with the business crowd at breakfast and lunch, and with the growing number of young downtown residents, the dinner business is doing well, too. In Green Valley, the District location doubled its size this year to accommodate fans. The flagship Hualapai location near Summerlin continues to do well. With the airport opening in November 2013, it brings the total number of Rachel’s Kitchen locations across Las Vegas valley to six.

“While it’s exciting to be expanding and finding new customers, we have been very careful not to rush the growth in our valley” Roxarzade says. “With the economy on such a roller coaster the past few years we wanted to be smart and grow at a pace we could sustain. Sometimes that is the most difficult part of being an evolving business—knowing when to say ‘now is the time and this is the location.’” Roxarzade anticipates future growth will be outside of the Las Vegas valley as her bistro stretches to new communities, potentially in the southwest and northwest regions.
