The story of the future of the foodservice industry starts with a man, a man who trained to become a chef, a chef who wanted to do things differently. Or maybe it was that all he could afford to do was something different. But in his first restaurant, different is what he did: different service format, different ingredients, different sourcing partners, different idea of what was possible outside of the fine-dining arena.
As part of its November issue, GQ Magazine released its list of “10 Best Airport Restaurants in America,” and global restaurateur HMSHost had three of its restaurants in the Top 10. Topping the list is celebrity chef Rick Bayless’s Tortas Frontera at Chicago O’Hare International Airport—HMSHost operates locations in Terminals 1 and 3—followed by Michael Voltaggio’s ink.sack, which HMSHost is bringing to the new Tom Bradley International Terminal at Los Angeles International Airport.
Chicago-based chef Rick Bayless announced he will open a Tortas Frontera location at the University of Pennsylvania as the chain's first establishment on a college campus. The quick-service Mexican restaurant is now under construction and projected to open in early January, 2014.
