The team behind Chicago’s original, health-focused fast casual, Protein Bar, opens an all-new concept today, Thrive360 Eatery (37 S. LaSalle St.), designed with a holistic approach to wellness in mind.

The culinary-driven menu at Thrive360 Eatery features craveable dishes, made-to-order with premium, nutrient-rich ingredients. The menu offers chef expertise to provide inspired meals that build on familiar favorites with a healthy twist, like a club wrap featuring turkey bacon or unexpected combinations like a Chicago BBQ sauce with Korean sambal oelek. Entrees called ‘Grains and Greens’ offer something heartier than a salad while still clean, balanced, and extremely flavorful. Delivering a just-made experience, Thrive360’s menu features a selection of nine house-made sauces and dressings including a chia vinaigrette with aronia berry, and a salsa roja. A “Make Your Plate” menu encourages guests to pair a preferred protein (like humanely raised sliced chicken, not-fried falafel, locally sourced tofu, or braised beef) with two or three signature sides including savory sweet potatoes or a clear noodle salad.

An innovative beverage menu features Kombucha on draft and mocktails. These mocktails infuse Kombucha with specially created flavored ice cubes like honey cinnamon or pineapple to transform the flavor while drinking. In addition, the “bar” concept that inspired the original Protein Bar will live on at Thrive360 Eatery, where a Protein “Bar” will serve the same healthy, blended beverages Protein Bar fans know and love.

The décor at the new storefront creates an urban oasis environment, helping guests get the most out of their lunch break or after-work meal. Flowing, wood fixtures draw inspiration from nature and the restaurant layout is designed to improve the connection between guests and staff. Diners will find the pace for ordering and receiving meals to be efficient, yet calm. In addition, guest-sourced digital murals of sun-scapes, viewing which provides a mentally restorative effect, are featured on rotation in the restaurant.
