Just Salad, the eco-friendly salad brand with 29 locations in New York, Chicago, Hong Kong, and Dubai, unveiled its new modern store design at 291 Seventh Avenue, Manhattan, across from the Fashion Institute of Technology.

To create the new store, Just Salad partnered with design firm Architecture Outfit, which created a simplistic design to match Just Salad’s approach to serving healthy meals.

“The Just Salad salad is stripped down to natural ingredients with no additives, so we took that idea and applied it to the design,” says Thaddeus Briner, owner of Architecture Outfit. “Our space is no frills and comprised of utilitarian materials like painted wood, kindorf fittings, and poured concrete.”

The new store also includes denim-wrapped walls, beechwood bar stools, and hand-crafted shibori seat cushions made in Brooklyn, New York. Just Salad CEO and co-founder Nick Kenner says the fast-casual chain plans to update all of its stores with the new look as well as the new locations opening in Chicago later this year.

The team installed new signage, including a dry-erase mirror where the store can update its local and organic ingredient list in real time.

“We want to be able to give customers real-time updates so they know exactly what they’re eating,” Kenner says. “Being honest with our customers is most important. Our new store design lets us do a better job of telling customers who we are: a company dedicated to making healthy food accessible and easy for everyone.”

Founded in 2006 and based in New York City, Just Salad offers quality proteins like free­range, grass-fed beef, antibiotic­free, humanely raised chicken, sustainable seafood, and organic tofu. The “JS Promise,” the brand’s all-encompassing philosophy, is to provide quality, healthy food in a fast, responsible, yet affordable way.
