Partners, Karim El-Gamal, Michael Kasseris, and Jason Kleinerman opened New City Microcreamery on Hudson’s Main Street in May 2015 and expanded to Cambridge in the fall of 2018. New City Microcreamery’s flagship shop and open kitchen production facility are located across the street from their restaurant, The Rail Trail Flatbread Co. in Hudson. The Rail Trail Flatbread Co. was established in 2012 and the award-winning team is known for their wood-fired flatbreads and expansive craft beer program.

New City Microcreamery combines classic New England farm-fresh dairy with a first of its kind modern liquid nitrogen process for all eyes to see in its open kitchen. The end result is a cross between the creamiest classic New England ice cream and modern technique at its most indulgent. The creative confections start with milk from Massachusetts based Mapleline Farm and is steeped with boundary-pushing and local ingredients and then flash frozen with liquid nitrogen in small batches.

If one is lucky enough to find the hidden door in the rear of the shop, they would be pleasantly transported to what feels like another world. What awaits the curious imbiber is what locals call <> ( also known as Less Than Greater Than). A speakeasy cocktail bar where guests can watch their drinks and dishes come together from across the soapstone bar or cozy up in the dining room at this dimly-lit cocktail refuge. The bar specializes in decadent food, craft cocktails and a creamy, almost frozen whipped ice cream cocktails they call “Spirits and Cream,” all made-to-order using liquid nitrogen right before your eyes.
