Spring is in the air, and at Cowboy Chicken, the season’s warmer temperatures and cool breezes are accompanied by an updated spring menu. The fast casual brand known for its wood-fired rotisserie chicken and homemade side dishes is bringing back its popular Trail Boss sandwich and rolling out a crop of tasty new additions as well.

The Trail Boss, available starting Monday, April 5, features a breaded rotisserie chicken breast, flash-fried and topped with lettuce, mayo, sweet and spicy pickles and house-made ranch dressing.

That mouthwatering favorite is joined by two seasonal salads: the Southwestern corn and bean salad featuring pinto beans, black beans, roasted corn, grape tomatoes, red onion, cilantro and jalapeños topped in a zesty dressing; and the updated tomato and cucumber salad with grape tomatoes, cucumber, cilantro and red onion tossed in house dressing.

To top it off, beginning May 3, guests can wash down their Cowboy Chicken favorites with a glass of delicious and refreshing watermelon tea inspired by generations of Texas watermelon growers—along with sweet, fresh-cut watermelon slices.

The Trail Boss is available through July 4; the Southwestern corn and bean salad, the tomato and cucumber salad and the watermelon slices and watermelon tea are available through Oct. 3.
