Chicken Salad Chick, a fast-casual restaurant concept, is building on to its corporate staff with the addition of Jim Thompson, vice president of operations, Jessica Claussen, corporate trainer, and Mimi Martin, administrative assistant.

 

Thompson will serve as our new vice president of operations. In his role, Jim will assume responsibility and oversight for all restaurant operations including day to day operations, training, and support. Jim has a strong background in training and support over the last 25+ years within the restaurant industry. Jim has most recently worked as a regional vice president of franchising and licensing for Papa Gino’s & D ’Angelo’s, a sandwich and pizza concept, in New England. During his eight years with his former company, he also served for 3+ years as a regional vice president of operations. Chicken Salad Chick president, Kevin Brown shares, “we are excited to have Jim join our team and feel he has the experience and approach necessary to execute at a high level with us.”

 

Claussen will serve as a corporate trainer. In her role, Jessica will be an integral member of our training team for owner, manager, and staff training. Jessica is a 2013 graduate of Auburn University with a degree in Psychology. Jessica has been a member of the Chicken Salad Chick family for 2+ years in our Auburn locations where she excelled in all aspects of her position. She has experience in both FOH roles and Sandwich Line roles and also served for 6+ months as an administrative assistant. “We are excited for Jessica to continue her career with us in her new role and know that her enthusiasm and attitude will be incredible assets for all of us,” says Stacy Brown, founder of Chicken Salad Chick.

 

Martin will serve as an administrative assistant. In her role, Mimi will assist in many of the administrative duties within the corporate office in regards to brand development and sales. Mimi is a 2010 graduate of Auburn University with a degree in Human Development and Family Studies. Mimi has most recently served as a customer service representative and administrative assistant at Midsouth Bank. “We are excited to have Mimi join the family and know that her attention to detail and team mentality will contribute to making us all better,” says Kevin Brown, president of Chicken Salad Chick.
