boloco is pleased to announce the newest addition to its executive team, Scott Nietschmann, who has taken on the role of chief operating officer. In this role, Scott will work closely with each boloco location and its team members, aiming to manage and improve the behind-the-scenes operations of the restaurants.

 

Scott joins boloco with years of operating experience, having held a variety of positions within the restaurant industry. Throughout his career, Scott worked as COO of Brinker International (Chili’s Grill & Bar Restaurants), president of Magic Restaurants (Fuddruckers and Koo Koo Roo Restaurants), and most recently, as president of Shula Burger and Shula Bar & Grill.

 

“Scott has a strong background in operations, and we knew this was an area we needed to really focus on to improve the experience for our guests,” says Patrick Renna, boloco’s CFO and interim CEO. “One of our top priorities for 2014 is to take a hard look inside our own four walls of our restaurants. Our goal is to provide the same quality boloco experience at every location, so whether someone stops at a boloco in Bethesda, Maryland, or in Copley Square or Warwick, Rhode Island – they walk away feeling good about the food, the experience, and the people. We think Scott will play an integral role in achieving this goal.”

 

Scott previously resided in Florida, but recently relocated to Boston (just in time for that New England winter). He will work out of boloco’s Headquarters, conveniently located above the boloco on the Boston Common, where Scott plans to regularly enjoy his favorite globally inspired burrito, the buffalo, inspired by an even colder town than Boston.
