Just Salad, the much-loved salad brand with more than 20 locations in New York City and around the world, opened its first Chicago location. Situated in the historic Gibbons Building in the busy South Loop neighborhood, the store will help meet Chicagoans’ increasing demand for more accessible healthy dining options.

By offering quality, sustainably sourced proteins including grass-fed beef, organic tofu, antibiotic-free and humanely raised chicken, sustainable seafood, and a variety of organic and non-GMO options at each location, Just Salad has taken a lead in environmental responsibility. For its Chicago opening, the store will pay homage to the Windy City’s favorite export: the Chicago dog. As part of its spring seasonal menu, Just Salad will feature the Windy City Kicker—an indulgent blend of romaine, Fabbri hot Italian sausage, Marconi Giardiniera peppers, Parmesan, green peppers, celery, and red onions.

The 2,200-square-foot space will also feature a hand-constructed installation from Chicago-based artist Matthew Hoffman.
