A new farm has joined Modmarket’s table and is now providing the eatery’s eight Colorado restaurants with three different varieties of greens, including spring mix, arugula, and spinach.

California-based Scarborough Farms is a 20-year-old, family-run farm that follows small-scale, custom farming methods to ensure fresh, just-harvested gourmet products. The farm began providing Modmarket with the new greens in late August, and, according to the restaurant, has enhanced the flavor of its entire menu.

“We've been infatuated with Scarborough Farms’ greens ever since we first tasted them on a research trip to California three years ago,” says Chef Nate Weir, director of culinary operations for Modmarket. “So when the opportunity arose to partner with Scarborough, we jumped at the chance.

“Their spring mix, arugula and spinach is incredibly vibrant and flavor packed—the kind of fresh flavor that jumps off the plate. We feel good knowing everything is grown with small-scale European agricultural techniques that sustainably take care of the land,” Weir adds. “With fresh greens at the heart of so much of our food, I believe our whole menu has gotten a big boost in flavor as the result of partnering with this great company.”

Scarborough greens are currently only in Modmarket’s Colorado locations and will be incorporated in Texas as additional restaurants are added in the market.
