The origins of Frito Pie remain a subject of debate, but no Texan can argue with the popularity of the dish, which has become synonymous with another Texas staple: football.
Although many a Frito Pie has been consumed over the decades in stadiums and parks across the state, it has always been challenging at best to do so in a way that does not require a massive amount of napkins.
Dillas Primo Quesadillas, a popular Plano, Texas, fast casual specializing in gourmet quesadillas, has created a nontraditional, but decidedly more convenient way to enjoy the favored fare: the Frito Pie Dilla. In honor of National Chili Month—and football—hungry fans will soon find the familiar combo of seasoned ground beef, chili sauce, queso, fresh red onions, and, of course, Chili Cheese Fritos, conveniently layered between a crispy grilled tortilla with Dillas signature cheese blend. Add jalapeños to kick it up a notch. The culinary concoction will be served for a limited time beginning Monday, October 19 through Thanksgiving.
Known for his unique and tasty quesadilla combinations, Dillas owner Kyle Gordon says it seemed like the perfect choice for fall.
“As a University of Texas grad and a football fan, it just hit me: fall, football, Frito Pie. I personally have consumed plenty over the years, and I decided there has to be an easier way to eat it. Of course, for some it will be a melty, cheesy mess, just like the real thing. But that’s okay,” Gordon says. “We have plenty of napkins, just in case.”
Served with a side of sour cream sauce for dipping, the Frito Pie Dilla is available in two sizes—regular ($6.99) and Gorilla Style ($10.49)—along with other freshly made popular choices including the Founder (chicken or steak, portobello mushrooms, roasted peppers, onions, cheese blend, and creamy churri dipping sauce), LoneStar (house-smoked brisket, cilantro, fresh red onions, Austin’s Own BBQ Sauce, jalapeño ranch for dipping), and Gordo (a bacon-cheeseburger and fries in a dilla with ground beef, pico, bacon, seasoned fries, jalapeño ranch for dipping).
