Rubio's Restaurants, the brand known for its uniquely delicious coastal cuisine and popularizing the fish taco, is adding to its selection of sustainable grilled seafood with the introduction of the Smoky Oaxacan Shrimp Two Taco Plate and Burrito. Created and developed by cofounder Ralph Rubio and the Rubio’s culinary team, the dishes feature bold new flavors inspired by cuisine of the Oaxacan coastal region of Mexico. The Smoky Oaxacan Shrimp Two Taco Plate and Burrito will be available for a limited time.

Featuring pan-seared sustainable shrimp marinated in a blend of chipotle, anaheim, ancho and guajillo chiles, Rubio’s new Oaxacan sauce is smoky with a mild kick. The Smoky Oaxacan Two Taco Plate features mouth-watering shrimp placed atop warm stone-ground corn tortillas topped with melted cheese and garnished with creamy Haas Avocado slices, cilantro/onion mix, cabbage, chipotle white sauce, and is served with no-fried pinto beans and sea salted tortilla chips. The Smoky Oaxacan Burrito is filled with the marinated, Oaxacan shrimp and wrapped in a warm flour tortilla with fresh, handmade guacamole, citrus rice, black beans, grilled vegetables including peppers, onions, and zucchini, and creamy chipotle sauce.

Starting in January, Rubio’s will also expand their alcoholic beverage menu to include hand-selected red and white wines. The new wines include The Beachhouse California Chardonnay with rich flavors of citrus, ripe peach and pineapple finished with a tangy lemon freshness, and Poema Spanish Red Blend, a medium-bodied blend fusing Cabernet Sauvignon, Garnacha, and Tempranillo with a hint of ripe red fruit and spices. Guests 21 and older can also enjoy local craft beer, Mexican beer, and fruit-infused sangria at select Rubio’s locations.
