Chicken Salad Chick, the nation’s only Southern-inspired, fast-casual chicken salad restaurant, announced its second location in Mobile, Alabama, will open on Monday, February 22 at 5753 Old Shell Road. Located in the South Landing Retail Center, the new Chicken Salad Chick is owned and operated by long-time franchisee team Misty Lee Hudson and Heath McClure, who currently own one additional location in Mobile and one restaurant in Daphne, Alabama.

“Mobile is a family-oriented community, so we knew there was a great opportunity to open an additional Chicken Salad Chick in the area,” Hudson says. “The success we’ve experienced in both Mobile and Daphne is a true testament to the concept’s growth potential in the Alabama market. We look forward to serving local residents and providing them with Chicken Salad Chick’s fresh, homemade recipes that you can’t find anywhere else.”

Prior to Chicken Salad Chick, Hudson worked as an orthopedic and plastic surgery medical device sales representative in the operating room at Duke University. Her first experience with Chicken Salad Chick was at dinner with the founders, Kevin and Stacy Brown, where she instantly fell in love with the philanthropic side of their business. Once her longtime friends experienced success with their Columbus, Georgia, locations, Hudson knew she needed to invest in the Chicken Salad Chick concept. Hudson is very involved in the Mobile and Baldwin communities, and she also sits on the national Chicken Salad Chick Foundation board to fight cancer and hunger. 

The Chicken Salad Chick concept, born in Auburn, Alabama, was established in 2008 in the kitchen of founder, Stacy Brown. When Brown discovered that the local county health department would not allow her to continue making and selling her delicious recipes out of her home kitchen, she overcame that obstacle by launching her first restaurant with the business expertise of her future husband and fellow founder, Kevin Brown. Together, they opened a small takeout restaurant, which quickly grew; the company now has 44 restaurants across the Southeast.
