Like all good Southerners, Brian and Sassy Henry, the cofounders of Palmetto Cheese, grew up on pimento cheese. Brian was raised in Louisiana and is accustomed to a little extra spice in his life and food. To him, it seemed natural to add jalapeños to a childhood favorite. The result is a biscuit that’s not too hot, but has jalapeño flavor with a little burn.

“Biscuitville’s spicy chicken biscuits were already delicious,” Henry says. “But adding jalapeños, and a little pimento cheese with soul, takes them to a whole new level!”

The spice component in the chicken brings the heat with a blend of American-grown peppers: cayenne for heat, white pepper for balance, and bell peppers for flavor.
