Bubbakoo’s Burritos, a Jersey Shore-based eatery that touts Mexican food fused with American flavor, is moving north of its Point Pleasant roots and opened a location in Mount Olive on Friday, February 8, 2019.

Located at 110 US 46 at the Village Green Shopping Plaza, the new restaurant is owned and operated by Jerry Finegan, who has worked in construction for 30-plus years before joining on with Bubbakoo’s.

“Bubbakoo’s has a well-established loyal following throughout the state, and I’m excited to introduce the innovative menu and warm hospitality to Mount Olive,” says Finegan. “I was thrilled to find a self-sufficient business model that had a high-quality and great-tasting product. I am confident the community will fall in love with Bubbakoo’s.”

Bubbakoo’s Burritos offers the usual fast-casual burrito fare such as burritos, bowls, tacos, salad, nachos and quesadillas, but with 16 different protein options—including fried chicken, barbecue pork, Buffalo shrimp and grilled steak, as well as some more unusual flavors such as ghost pepper chicken, and sriracha pork. Vegetarian options include a bean-cheese-guacamole combo. And, originals such as The Chiwawa, a cheese-smothered, panko-crusted fried rice ball, keeps Bubbakoo’s faithful coming back.

Beyond the menu, Bubbakoo’s offers an environment like no other, with décor reflecting the eatery’s Shore roots, inviting guests to enjoy a host of regional beachside designs, and unmatched service standards that truly make the restaurants feel like home.

“Unlike other fast-casual chains, we put the focus on an interactive, high-quality customer experience with superior food,” says Paul Altero, co-founder and owner of Bubbakoo’s. “From ghost pepper chicken burritos to our Chiwawa, our menu is designed with customer’s evolving taste buds in mind. Moreover, our store design and friendly atmosphere is reminiscent of the towns we are joining, cementing us a local community partner and go-to destination.”

According to Altero and co-founder and owner Bill Hart, Bubbakoo’s expects to have 50 restaurants at the end of 2019 and currently has 25 restaurants open with nine more in development.
