While most industries are stagnant or growing at a slow pace, Cafe Rio Mexican Grill has taken the opposite route by continually expanding, adding jobs and soaring in an otherwise tepid marketplace. Cafe Rio is scheduled to open its seventh California restaurant on January 10 in Redlands. In the past 18 months, Cafe Rio has added Lake Forest, Manhattan Beach, Costa Mesa, Tustin, Oxnard, and, most recently, Lakewood to its California locations, and approximately 280 jobs to the marketplace.

Cafe Rio Mexican Grill continues to add jobs, serve award-winning food, and donate to local communities at every location. That effort will continue in Redlands. In the past three years the company has opened 20 locations, filling more than 900 positions, with plans to open 10–12 additional locations across the country in 2011.

Guests, residents, and media are invited to attend the Redlands opening ceremony on January 10 at 11:30 am at 27510 W. Lugonia Ave, where a $2,500 donation will be given to the Redlands Unified School District.

The company operates 39 restaurants in Utah, Nevada, Idaho, California, Colorado, and Arizona. It has plans to open additional restaurants this year in Utah, Colorado, Maryland, and Virginia.
