The Wiggins bring 20 years of restaurant industry experience to the Chicken Salad Chick family. In addition to their prior experience, Bob Wiggins was also involved in the commercial real estate industry. Their first taste of Chicken Salad Chick came after Penny Wiggins and founder Stacy Brown met on a trip to Florida seven years ago. After learning more about the brand’s inspiring story, the Wiggins’ were sold on the unique concept and made the business decision to return back to the restaurant industry. As Georgia natives, Bob and Penny are very involved in the local community and reside in Cartersville with their seven children and 12 grandchildren.
“Prior to our introduction to the Chicken Salad Chick concept, we had no plans on returning to the restaurant industry following two decades as restaurant owners and operators,” says Bob Wiggins. “After witnessing the brands tremendous growth rate and ongoing success, we realized there was a great opportunity with the emerging company and were excited to jump back into the industry. The demographics and growing economy in the Gainesville market make it the perfect location for a concept like Chicken Salad Chick, and we’re thrilled to be joining the family. We look forward to opening our doors and introducing the same impeccable hospitality, southern culture and unique dining experience that attracted us to brand with the local Gainesville community and residents for many years to come.”
The Chicken Salad Chick concept, born in Auburn, Alabama, was established in 2008 in the kitchen of founder, Stacy Brown. When Stacy discovered that the local county health department would not allow her to continue making and selling her delicious recipes out of her home kitchen, she overcame that obstacle by launching her first restaurant with the business expertise of her future husband and fellow founder, Kevin Brown. Together, they opened a small takeout restaurant, which quickly grew; the company now has 70 restaurants across the Southeast.
