Costa Vida, a fresh and fast 95-unit casual chain known for its vibrant and innovative Mexican cuisine, has announced the opening of a new full-service and drive-through location in Eagle. The store will open its doors to the public on Wednesday, February 28 for lunch. Costa Vida offers a variety of custom, made-to-order items such as handcrafted tortillas, burritos, tacos, enchiladas, quesadillas, salads and nachos.

“We’re thrilled to be joining the Eagle community as a fresh and unique option for delicious Mexican food prepared from scratch,” says Denny Wagstaff, franchisor, Costa Vida Fresh Mexican Grill. “We know our customers love our freshly made tortillas, and our high-quality, all-natural ingredients. We can’t wait to become a part of the neighborhood and to offer the hand-crafted menu items our restaurants are known for.”

Costa Vida Fresh Mexican Grill’s fast casual concept launched with the idea that fresh, whole food, prepared on site, is best.  The national chain has been preparing and serving fresh made-to- order entrées from the front of the house since day one, and for the last 15 years has been catering to a customer who values flavor, freshness, wholesomeness, and order customization.

As part of the Grand Opening festivities, local radio station KIZN Idaho Country 92.3 will be onsite broadcasting LIVE during the Costa Vida Grand Opening from 12 noon to 2 pm. Local radio personality Shawnda McNeal will be offering consumer giveaways including Costa Vida swag, store credits, $100 gift cards, and free food items.
