Cowboy Chicken has collaborated with Atlanta-based consulting chef and Cooking Channel star Eddie Russell for a new menu category called “Bolero Bowls.” Rolling out on July 22 and available until September 30, these bowls offer a new format for enjoying the restaurant’s bold flavors and natural ingredients.

Colorful, satisfying and chock full of fresh vegetables, slow-roasted chicken and flavor-packed toppings, the new Bolero Bowls offer three exciting options. The Campfire Bowl features roasted corn, onions and tomatoes topped with Cowboy Chicken’s signature rotisserie chicken, cilantro, cotija cheese and house-made creamy avocado sauce. The Triple Green Bowl is served cold with a base of broccoli, green beans, kale and Brussels sprouts. It is topped with signature rotisserie chicken and cracklins, drizzled with house-made chipotle ranch and finished off with crispy fried kale mix. The Durango Bowl starts with homemade ranchero beans and Spanish rice piled high with a mix of fresh and roasted tomatoes, onions and cucumber. The bowl is then topped with rotisserie chicken breast and drizzled with creamy avocado sauce and roasted red pepper salsa.
