DIG, the chef-centric eatery based in New York City, welcomes Scott Nicholson as its new Chief Operating Officer. An accomplished and results-oriented restaurant executive with over 20 years of experience leading top-level restaurant professionals, Nicholson joins his new role to oversee and achieve complex goals and implement efficient systems to promote operational success.

In his new role, Nicholson will be responsible for leading restaurant operators to strive for efficiency and implementing innovative strategies that ensure optimal operations. Working closely with the executive team, he will continue to build positive and productive internal relations that lead to excellence in brand execution with both sales and profitability growth.

Nicholson brings a wealth of operations knowledge to DIG, as an affable leader with substantial experience building career pathways and cultivating talent to promote from within. He is a boots- on-the-ground operator who prefers to work in the field. Nicholson previously held the title of COO at Pokeworks, as well as the Senior Vice President of Operations at Veggie Grill, Inc., preparing and granting him his experience in building for scale across fast casual franchise brands, similar to DIG.
