Just Salad, the eco-friendly salad brand with 28 locations in New York, Chicago, Hong Kong, and Dubai, opened their second Chicago location at 120 W. Adams Street on Thursday, April 21. Just Salad will have five Chicago locations by the end of the year.

“We saw over 500 Just Salad fans on Thursday,” says Just Salad CEO and cofounder Nick Kenner. “We heard from so many people who work nearby how they were excited to finally have a healthy lunch option and we’re so proud to provide that to our neighbors.”

The Pay-What-You-Wish grand opening promotion invited customers to pay whatever they wanted for their salads, with all proceeds benefiting Growing Power, a group dedicated to responsible farming and providing affordable food to low-income neighborhoods.

“Growing Power was the perfect partnership for our grand opening because we’re both committing to providing local communities with healthy, affordable food,” Kenner says. The grand opening celebration raised over $1,000 for the organization.

Just Salad will open its third location at 10 South Riverside this summer, with a fourth and fifth location to open by the end of the year.

Just Salad has taken the lead in environmental responsibility, headlined by its signature reusable bowl program, which saves nearly 75,000 pounds of plastic every year in the United States. Just Salad has already distributed more than 5,000 reusable bowls in Chicago and plans to distribute thousands more this year.
