Larkburger Serves Sustainably Sourced Tuna Burger

It may be known best for its classic beef burgers, but Colorado fast-casual concept Larkburger is introducing a fresh take on a different menu item this week: the tuna burger. It is made with responsibly sourced tuna loin—tuna that is wild caught and monitored by Friend of the Sea, a watchdog group that ensures fish is farmed and processed sustainably. Larkburger is currently the only restaurant in the state with the rights to serve the tuna.

The tuna is new to market and unique because it is sliced from the loin using a classic French culinary technique, which Larkburger refers to as “torchon.” For Larkburger, using the torchon method creates a disk-shaped piece of sinew-free, sushi-grade tuna that’s perfect for grilling.

“This product, which was crafted specifically for Larkburger, is innovative. It’s high quality and it’s sourced with the environment in mind,” says Adam Baker, Larkburger CEO. “And this tuna is a product that aligns with Larkburger’s core values of healthful ingredients, environmental sustainability, and, of course, delicious flavors.”

The tuna burger is part of Larkburger’s free Four Course Tasting, which allows fans to try multiple menu items at Larkburger’s 16th Street location.

The new tuna burger is available at all 12 locations.
