Lion’s Choice, the St. Louis-based quick-service family of restaurants, announced it will open a new location in Cortex, the innovation and technology district of St. Louis. The restaurant will be located on the ground floor of the BJC Commons at 4249 Clayton Ave. and will be open seven days a week. The location is scheduled to open in late August.
Following the success of the company’s recent test of breakfast at its O’Fallon, Illinois, restaurant, the Cortex location will be the first Lion’s Choice restaurant this side of the river to serve breakfast. Breakfast menu items, offered daily from 6 – 10 a.m., include a Steak ‘N Egg flatbread sandwich, a Florentine egg white flatbread sandwich, a variety of fresh baked goods and yogurt parfaits. The new location will also feature a special quick pickup area for guests who place orders online or by using the Lion’s Choice app.
“Cortex is one of the hottest areas in St. Louis, and we can’t wait to bring our legendary sandwiches to this innovative community,” says Mike Kupstas, CEO of Lion’s Choice. “Creating the technology of tomorrow can’t be done on an empty stomach, and we’re excited to join such a dynamic and energetic part of the city.”
The Cortex restaurant is Lion’s Choice’s second to be located within the city limits of St. Louis (the other is located at 6630 Chippewa St.). This expansion follows the recent announcement of the company’s plan to open two new restaurants in the Kansas City area later this year.
“The new location allows us to serve not only the growing Cortex community but also our fans in The Grove and the Central West End,” adds Kupstas. “In addition to growing the brand outside of St. Louis, we’re always excited to expand in our hometown and provide new dining options to our loyal customers who have supported us for the past 50 years.”
