Lion’s Choice, the St. Louis-based quick-service family of restaurants, announced it will test a new breakfast menu featuring hot breakfast sandwiches, baked goods, fresh fruit, juices and coffee roasted by local coffee and roasting company, Kaldi’s Coffee Roasting Co. The breakfast test will take place exclusively at the new Lion’s Choice restaurant in O’Fallon, Illinois, located at 450 Regency Park Drive. The restaurant will start serving breakfast when it opens for business Tuesday, July 10, at 6 a.m.
“We are excited to take this first step toward expanding our menu to include breakfast,” says Mike Kupstas, CEO of Lion’s Choice. “For a long time, our customers have been asking for breakfast, and I’m confident they are going to enjoy what we’ve created. Whether you’re in the mood for our legendary roast beef or you’re looking for a nonmeat option, we’ll have something for everyone. Mornings are better when you have Lion’s Choice for breakfast.”
Lion’s Choice’s breakfast menu features items that can be enjoyed in the restaurant or on the go. Hot breakfast offerings include:
- Steak ‘N Egg Flatbread Sandwich – features legendary Lion’s Choice slow-roasted beef, egg, Swiss cheese, chives and a special horseradish hollandaise sauce
- Ham ‘N Egg Flatbread Sandwich – features hickory-smoked ham, egg and Swiss cheese
- Florentine Egg Flatbread Sandwich – features egg whites, spinach, hummus and chives
- Sausage ‘N Egg Muffin Sandwich – features sausage, egg and pepper jack cheese
To complement the breakfast menu, Lion’s Choice has partnered with St. Louis-based Kaldi’s Coffee Roasting Co. to offer a unique coffee blend as part of the breakfast test. In addition to Kaldi’s coffee, several varieties of Firepot Nomadic Teas will be available.

In addition to the hot sandwiches, a variety of baked goods will be available, including a Cinnamon Pull-Apart, Coffee Cake, Kouign Amann, and a variety of muffins. Also on the menu are strawberry parfait, vanilla yogurt, steel-cut oatmeal, hash browns, orange juice and apple juice. Breakfast will be served daily from 6-10 a.m.
Several factors contributed to the selection of the O’Fallon, Illinois, restaurant as the test location for Lion’s Choice’s breakfast menu. The restaurant shares a reception area with Reliance Bank in a unique format designed to enhance customer options and convenience, and the location is along a well-traveled road with morning commuters looking for convenient breakfast option.
“Our O’Fallon, Illinois, restaurant provides us with unique benefits when it comes to our breakfast test. Our shared space with Reliance Bank provides a built-in customer base that has been hungry for a breakfast option,” says Kupstas. “We’re looking forward to welcoming guests a little bit earlier in the morning, but with the same friendly service and quality food they’ve come to expect at Lion’s Choice.”
The Lion’s Choice breakfast menu was created with expansion in mind. All menu items can be stored, prepared and served in the chain’s existing restaurant/kitchen formats. A decision to roll out breakfast across the company’s other 23 locations is expected later this year.
