Avocados from Mexico announces “The Amazing Avocado Chef Recipe Contest,” which challenges foodservice chefs to come up with innovative, avocado-inspired recipes. Celebrity chef and author Roberto Santibañez and a team of foodservice professionals will select two winners to receive a trip to the 2010 Culinary Institute of America’s Latin Flavors Conference in San Antonio, or a cash prize of $2,500.

From April 1-June 30, contestants may enter recipes that highlight avocados as the star ingredient in one of two categories:

•Comfort Food Classics. Avocados are great in salads and dips, but they’re also good in home-style favorites like breads, pastas, savory dishes, and even desserts. Give extra creaminess and excitement to mac n’ cheese or inspire a cheesecake with the addition of avocado.

•Ethnic Inspirations. Explore the use of avocados in bold, flavorful global dishes. From Japanese to Peruvian, the creamy texture and delicious taste of avocados make a versatile addition to a variety of menu items.
