Modern Market Eatery launches its new winter menu November 14. Both sweet and savory items are featured this season, including Truffled Artichoke Pizza, Honey Balsamic Brussels and a Pearl Sugar Waffle.
The Liège-style Belgium waffle is a sweet new addition to the Eatery’s breakfast menu, which, until now, consisted of mainly savory egg and avocado dishes.
“The Belgian waffles that everyone thinks of are typically a Brussels-style, unsweetened waffle,” says Chef Nate. “We’re excited to introduce a Liège waffle instead. What’s unique about these is they’re made with a special pearl sugar baked into the batter, so it’s more like a dessert waffle.”
A typical Brussels waffle is made from a yeast-based dough without much flavor or sweetness on its own, which is why many people enjoy their “Belgium waffle” loaded with syrup. In contrast, a Liège waffle is filled with Belgian pearl sugar that melts into the dough and creates a light crunch. As the waffle heats, the sugar caramelizes on the outside for a satisfyingly sweet bite.
To balance the sweet flavor, the Pearl Sugar Waffle is topped with Modern Market Eatery’s housemade blueberry chia jam, a fruit-forward berry jam made with balsamic vinegar, also found on the Super Berry Oats and Blueberry Pesto Sandwich.
