Modern Market Eatery, a healthy fast-fine restaurant brand known for its grain bowls, marketplace salads and seasonal cuisine, launches its new spring menu Wednesday, March 17. This season’s menu spotlights spring’s star vegetable: asparagus.

Modern Market’s Culinary Creative Chef Josh Chesterson takes a versatile approach to asparagus. He asks, “If it’s in season and it tastes great, why keep it in one place on the menu?”

Indeed, the menu is peppered with nods to asparagus. The new Prosciutto Asparagus Pizza features the perennial vegetable sliced among ribbons of marbled prosciutto balanced on a white cheddar sauce. Asparagus is also presented raw in the new Market Cobb Salad tossed with a dill-forward scallion ranch dressing. This seasonal vegetable makes additional appearances puréed in the Asparagus Split Pea Soup and blistered in the Fire Roasted Veggie Medley.

“We would be remiss to not incorporate asparagus throughout our spring menu,” explains Chesterson. “In season, it should be everywhere. We should embrace it before it’s gone.”

Modern Market’s spring menu doesn’t stop at asparagus. The restaurant recently added a cauliflower rice option, featured in the new Keto-friendly Med Bowl. The new pizzas, avocado toast and breakfast waffle also incorporate fresh, seasonal produce, including arugula, tomatoes and strawberries. Each dish delivers a harmony between raw and cooked elements.

The seasonal menu ends on a sweet note with the addition of a new marshmallow Nutella treat, the first dessert addition in several years.

  • Med Bowl – 100% grass fed steak, warm cauliflower rice, chimichurri, red onion, cucumber, Kalamata olive, romaine, feta, herb tahini yogurt sauce [$13.95]
  • Market Cobb – Romaine, Creminelli prosciutto, marinated asparagus & sugar snap pea, watermelon radish, hard boiled egg, gorgonzola, toasted sesame seed, fresh dill, scallion ranch dressing [$11.95]
  • Strawberry Nutella Pearl Waffle – Belgian pearl sugar waffle, fresh strawberries, Nutella, powdered sugar [$5.45]
