Not Just a Salad: Corner Bakery Introduces Cobb Sandwich

Fast-casual restaurant Corner Bakery Cafe introduced a new sandwich, the Smoked Turkey Cobb, to its diverse lineup of handcrafted sandwiches and panini.

“We all know the familiar and well-balanced flavors of the Cobb salad, and with our strong bakery heritage, we just can’t help but put such flavorful ingredients on a delicious bread,” says Ric Scicchitano, senior vice president of food and beverage. “The traditional Cobb salad has many distinct tastes, and we needed special bread that would stand up to those big flavors while bringing its own unique taste to the party.”

It took a few months, but Corner Bakery Cafe created the perfect bread—a brioche flatbread—to turn the classic Cobb salad into a signature sandwich. “The brioche flatbread is soft, sturdy, and slightly sweet,” Scicchitano says. “We made it a flatbread so that it doesn’t overpower the many tasty ingredients in the sandwich.”

Beginning with the brioche flatbread, Corner Bakery Cafe adds homemade avocado mayonnaise, smoked turkey breast, crisp, thick-cut applewood smoked bacon, bleu cheese crumbles, sliced hardboiled egg, green leaf lettuce, and fresh roma tomatoes. The sandwich boasts all the customary components of a Cobb salad, but in sandwich form, making it portable for diners on the move.

And starting February 23, Corner Bakery Cafe followers on Twitter can compete for the chance to try the new sandwich for free. Three questions will be posted on Twitter handle @CornerBakery each weekday through March 3 and the first five followers to @reply with the correct answer will receive a certificate via mail for a free Smoked Turkey Cobb Sandwich.

As part of Corner Bakery Cafe's “100 Under 600” menu featuring more than 100 Corner Combos that can be enjoyed for less than 600 calories, one half of the Smoked Turkey Cobb can be paired with one of five soups or one of two salads for a satisfying and calorie-wise lunch or dinner.
