Pancheros Mexican Grill announced it has opened the doors to its newest restaurant in Arden Hills at 3845 Lexington Avenue North.
Over the years, Pancheros has earned a loyal following for redefining the standards of a burrito. Pancheros has fresh-pressed tortillas and uses a unique spatula to tear down the walls that once stood between the meat, rice, beans and salsas, yielding burritos that are better built. In addition to burritos, the fast-casual restaurant serves burrito bowls, tacos, quesadillas, and salads. It has also earned popularity for its chips and queso and unique limited time offerings.
“I’ve been in the restaurant business over 25 years and at the age 92, I’m very proud to open my fourth Pancheros location and introduce the Arden Hills community to our menu,” says Bob Thomson, local owner of Pancheros in Arden Hills. “Arden Hills locals are going to love the simplicity of the Pancheros menu, offering them a convenient new dining option with the ability to customize each menu item as its prepared in front of them.”
In addition to the Arden Hills location, Thomson also owns Pancheros locations in Fridley, Bloomington and Golden Valley, and has plans in place to open another Pancheros location in Brooklyn Park next month alongside his director of operations and long-time friend, Craig Noah. In addition to Pancheros, Thomson is also the owner of several Subway franchises.
The new restaurant in Arden Hills marks the fifth Pancheros location in Minnesota, bringing the total to 68 units open across the country.

The brand’s pursuit to build the perfect burrito dates back to 1992, when Pancheros founder Rodney Anderson opened the doors to his first restaurant in downtown Iowa City, Iowa.
Amid its popularity, the brand has successfully grown from its roots and today a robust franchising program has led to nearly 70 locations across 13 states.
