Pork and Mindy’s, a creative barbecue concept led by founder Kevin Corsello and Executive Chef and Food Network star Jeff Mauro, announced the opening of its newest location in Denver, Colorado, which debuted June 25. Alongside leading foodservice company – Compass Restaurant Group – the creative barbecue concept brings a variety of offerings to the TIAA Building (1670 North Broadway) including one-of-a-kind ‘sangwiches,’ tots, and meats slow-smoked to perfection.

Pork & Mindy’s continues to prosper through pop ups and food halls. “Compass Group has helped us to identify the outlets as trendy and successful options to scale and spread the brand”, says Corsello. “The partnership has also helped our team learn to question and focus its business model, everything from operations to the path of purchase for consumers.”

Menu highlights include:

Bao to the Pork: Award winning, slow hickory-smoked, hand-pulled pork shoulder. Topped with our signature Asian Plum Sauce, pickled daikon & carrot, cucumber & jalapeño relish. Served on a steamed bao bun.

Pig Candy B.L.T.: Our famous Pig Candy bacon. Topped with lettuce, tomato, balsamic caramelized onions and dry rub mayo. Served on a griddled brioche bun.

Da Beef: Slow smoke-braised, hand-pulled beef. Topped with smoked sweet peppers and mild giardiniera. Served on an Italian roll and dipped in our beef au jus.

“Pig Candy”, a candied-bacon dusted in brown sugar & slow smoked to perfection – a tasty, good source of energy snack to take on-the-go.

Pork & Mindy’s latest venture in Denver follows the success of its flagship restaurants in Chicago and Minneapolis and the nationwide retail launch of Pig Candy. The TIAA opening also marks the second restaurant since forming a partnership with Compass Restaurant Group.
