Potbelly Sandwich Shop announced that its second Knoxville, Tennessee, location is set to open its doors to the public on December 13. The shop is located in downtown Knoxville across from Krutch Park at 522 South Gay Street. Widely acclaimed for being a popular neighborhood hangout, Potbelly features toasty warm sandwiches, hand-dipped milkshakes and live music, all making it “The Best Place for Lunch.”

Potbelly shops have earned a reputation in communities coast-to-coast for having delicious food, fun décor and fresh tunes. Mark Ray, the operating partner of the new sandwich shop, lives just north of Knoxville and has close community connections along with an extensive background in the foodservice industry.

“We couldn’t have opened this second location without the support from our community, our team and from the Potbelly system,” says Ray. “Along with seeing much success at our shop in Turkey Creek, we can’t wait to become a staple in the downtown Knoxville atmosphere as well.”

Ray will run the new downtown Potbelly Sandwich Shop with assistant manager Jeffrey Dicen. Ray will mainly manage the restaurant’s operations, focusing on hiring and training new staff, and working to develop the unique Potbelly culture.

“We have had an amazing time with our staff at the Turkey Creek location and cannot wait for what’s to come from the team downtown,” adds Ray. “It’s always motivating and inspiring to build a team of individuals that reflect Potbelly’s values. We’re excited for what our team will be able to offer our guests in the downtown area.”

Ray is in the process of hiring about 30 employees for the new Knoxville location, including customer service staff and managers. The shop will be open Monday through Wednesday from 10:30 a.m. to 8 p.m., Thursday, Friday and Saturday until 9 p.m and Sundays from 12 p.m. to 5 p.m. Ray is looking to begin delivery services a few weeks after opening.
