RedBrick Pizza, the fast-casual restaurant serving up fire-roasted gourmet pizza, sandwiches, and salads, announced plans to expand the signature open-flame brick oven pizza chain by more than 50 locations in four states over the next 3 years.

The first five locations showcasing the chain’s signature open-flame brick oven as well as two new restaurant designs are scheduled to open in time for holiday shopping in: Oakbrook Center in Chicago; Mall St. Matthews in Louisville, Kentucky; Northpark Mall in Joplin, Missouri; South County Center in St. Louis, Missouri; and Oakview Mall in Omaha, Nebraska.

The announcement comes after Brix Holdings LLC, an innovative multi-concept franchising company, acquired RedBrick Pizza in fall 2013 with plans to update the store design, invest in operations, marketing, and support, and expand the better-for-you pizza concept through franchising across the country.

The five newest RedBrick Pizza locations initially will be corporate-owned, but will be available for sale to franchise prospects with restaurant experience who are interested in opening future outlets. RedBrick Pizza currently operates 13 franchised locations primarily in California and Florida.
