The fifth location of Seoul Taco, the popular Korean-Mexican fast-casual restaurant, is now open in Chesterfield, Missouri, the hometown of chef/owner David Choi. The St. Louis-based brand known for its addictive Korean-influenced tacos, quesadillas, burritos, and nachos is located at 46 Four Seasons Shopping Center.

Seoul Taco’s innovative menu showcases the recipes and flavors of Chef Choi’s Korean-American upbringing in the St. Louis suburbs. Guests can pick their protein for dishes such as the Steak Tacos with Korean salad mix, green onion, secret “Seoul Sauce,” crushed sesame seeds, and a wedge of lime; or one of Choi’s favorites, the Spicy Pork Gogi Bowl, his take on bibimbap, with rice, fresh veggies, fried egg, carrots, green onion, sesame oil, and spicy Gochujang pepper sauce. The menu features a selection of unique side dishes such as the Kimchi-Fried Rice and Kimchi Slaw.

The Chesterfield restaurant is the first Seoul Taco location that features the work of both Chicago and St. Louis-based artists. Choi collaborated once again with Chicagoan Alex Morales of Smartmouth Design to bring Seoul Taco’s characteristic interior to life. The vibrant restaurant design includes a display of a deconstructed Seoul Taco food truck as well as street-art murals by local artist Daniel Burnett. The Chesterfield location also features Seoul Taco’s signature “Boom Box Wall” composed of salvaged vintage stereo systems. Additionally, Choi worked with David Stavron of St. Louis’s Shellback Iron Works to design the furniture, which was created from reclaimed wood and iron.
