Slim Chickens announced its newest opening at 2897 Richmond Rd. in Lexington, Kentucky, on January 29.

The newest Slim Chickens is part of the Houchens Food Group family of brands. A subsidiary of Houchens Industries, a 107-year-old company that is one of the nation’s largest 100% employee-owned companies. Houchens’ portfolio spans more than 13 industries including grocery, convenience stores, construction, and multiple franchise brands. Houchens Food Group is currently operating over 50 restaurants with seven different brands. The team expanded its portfolio with its first Slim Chickens location in Bowling Green, KY in 2021, added their 2nd Bowling Green location, acquired 3 Tennessee locations in 2022, and opened additional locations in 2023 including Clarksville, TN, Lexington, KY and Murfreesboro, TN. Now they are opening a second location in Lexington.

Aside from bringing its famous, delicious fried chicken and Southern-inspired sides to the area, the new Slim Chickens location in Lexington will also make a positive economic impact with over 75 new jobs anticipated for creation in the community.

The Lexington opening is one piece in Slim Chickens’ larger growth story. Since its founding in 2003, the brand has celebrated over 250 locations opened and a fanatical following in 34 U.S. states, as well as international locations in the United Kingdom, with an overall goal of opening 600 restaurants in the next decade. In Kentucky alone, the brand has already grown tremendously to 9 locations.
