Tiki Taco, the fast-casual taco restaurant known for its fusion cuisine and rad vibes, is experiencing significant growth across the Kansas City metropolitan area through multiple expansion initiatives.

Construction has officially begun at the brand’s new Olathe location, marking an important milestone in the company’s strategic expansion plans. Set to open in late Spring at 14749 W 119th St, Olathe, Kansas.

Additionally, Tiki Taco has secured a lease agreement for location number five in downtown Shawnee, further extending its presence in the region. Tiki Taco will be taking over a pre-existing restaurant at 11200 Johnson Drive, Shawnee, Kansas.

“We’re thrilled to bring our unique flavors to more communities across the Kansas City area,” said Jason Kinslow at Tiki Taco. “The construction progress at our Olathe location and our new lease in downtown Shawnee represent our commitment to meeting the increasing demand for our food.”

But wait there is more.

The restaurant has enhanced its visibility through strategic pop-up operations. Currently, Tiki Taco operates a weekly Tuesday pop-up inside the Kansas Health System cafeteria, serving its menu to healthcare workers and visitors. Further expanding its temporary locations, Tiki Taco will be adding an off-premise location inside Hy-Vee Arena for upcoming events.

The company’s growth trajectory has garnered industry recognition, with Tiki Taco recently being named in “20 Fast Casual Brands to Watch in 2025” by FastCasual.com, highlighting its innovative approach and expansion potential in the competitive fast-casual restaurant segment.

“With the successful completion of standardizing our systems, technology stack and strategic partnerships, we are now poised for substantial expansion,” said Eric Knott. “Our journey has just begun.”
