by CHLOE. (located at 185 Bleecker Street) opens in New York City, bringing 100 percent vegan, plant-based dining to the heart of the West Village. Chef and partner Chloe Coscarelli has crafted a menu featuring seasonal salads and soups, house-made burgers and sandwiches, fresh pastas, cold-pressed juices, vegan ice creams, freshly baked sweets, and more.

by CHLOE. is the first quick-service restaurant by ESquared Hospitality (BLT restaurants, Casa Nonna, The Wayfarer, Horchata, and others). Open seven days a week, the restaurant will offer an expansive all-day menu of hearty entrées and wholesome sides, as well as breakfast pastries, house-made sweets, and soon-to-come brunch highlighting locally sourced ingredients that are made fresh and in-house daily—including vegan cheeses, burger patties, nut milks, sauces, and condiments.

Chef Chloe, who has been a lifelong vegetarian and vegan for ten years, aims to bring delicious, wholesome, plant-based foods to the masses that fuel and energize without compromising flavor, taste, or satisfaction. Diners will enjoy market-driven soups, pastas, and salads such as Kale Caesar with shiitake bacon, avocado, almond parm, maple-wheat croutons, and Caesar dressing; and Spicy Thai with apricot-sriracha glazed tempeh, quinoa, edamame, scallion, crispy wontons, and peanut dressing. Entrées and sides include Kale Artichoke Dip; creamy Mac N’ Cheesewith sweet potato-cheese sauce and shiitake bacon; and Air Baked French Fries available as original or sweet potato with Chloe's signature Beet Ketchup or Chipotle Aioli. One of the main highlights of the menu will be the variety of house-made burgers and sandwiches (gluten-free options available) including but not limited to: the Classic Burger made with tempeh-lentil-chia-walnut patty with pickles, onion, beet ketchup, and special sauce on a potato bun); the Pesto Meatball, featuring Italian meatballs, marinara, sweet peppers, basil pesto, cashew mozz, and almond parm on a potato sub roll; Whiskey BBQ, which features smoky Portobello mushrooms and seitan, sautéed kale, onion marmalade, grilled pineapple, and bourbon BBQ sauce on a potato bun.

Known for her sweets, there will be a selection of cookies, muffins and pastries baked in house daily in addition to a selection of 100 percent dairy-, egg-, and gluten-free ice creams with flavors such as Kale Cookies + Cream; Coffee Chia Chip made with Stumptown Coffee; Salted Vanilla Caramel; and Boozy Banana Bourbon made with Woodford Craft Bourbon.

 by CHLOE. will feature an expansive collection of grab-and-go options, including Raw Lasagna with zucchini, tomatoes, sundried tomato marinara, pine nut ricotta, and cashew-basil pesto; Matcha Kelp Noodles with PANATEA Matcha, kelp noodles, cashew cream sauce, almond parm, and scallion; and Raw Vanilla Bean Chia Pudding with chia seeds, Madagascar vanilla bean, raw almond and cashew milks, and raw agave nectar.

“One of the main goals for by CHLOE. was to make eating healthy and vegan easily accessible to New Yorkers,” Coscarelli says. “Partnering with ESquared Hospitality has given me the chance to offer vegans and non-vegans alike a delicious selection of my favorite sweet and savory recipes to enjoy any time of day—even late night.  Whether they are coming in for a quick, filling lunch post-workout, grabbing a scoop of cream before class, or sitting down after work to enjoy a full dinner with juice-driven cocktails, I want our diners to feel at home at by CHLOE."

To complement the fare, by CHLOE. will offer beverages by Stumptown Coffee, PANATEA Ceremonial Grade Matcha, Bellocq Atelier Teas, and daily smoothies in addition to Juice by CHLOE., a unique line of Cold-Pressed Juices, Shooters, and Juice Flights (featuring  six 2-ounce shooters) named for the famed Beat poets who once roamed the neighborhood. A selection of craft bottled beers, sustainable wines, and signature cocktails prepared with organic spirits and Juice by CHLOE. will also be available. A few cocktails include the Giver Marg—organic tequila, The Giving Tree Juice by CHLOE., Pull My Daisy Shooter by CHLOE., orange, and salt; the Roadie— organic vodka, On The Road Juice by CHLOE., mint, and orange; Howlin’ Whiskey Mule—organic whiskey, Howl Juice by CHLOE., candied ginger, and lime; and Kale-Matcha Mojito, made with organic rum, PANATEA matcha, kale, cucumber, ginger, lemon, and lime.

The 1,032 square foot corner storefront (with 35 seats indoors and 10 seats on the patio) was the collaborative vision of ESquared Creative Director Samantha Wasser and Dekar Design (Dolores Suarez and Caroline Grant). Together, they created a space to reflect Chloe's food and make you feel as if you were at home in her kitchen.  The bright and airy space features unique textiles set on a neutral palette with pops of color inspired by the multi-colored by CHLOE. branding from Paperwhite Studio.  The black-and-white theme, inspired by the logo, is carried throughout, featuring reclaimed wood and hand-painted tiles with vintage hemp banquette seating, a zinc communal table, and two hanging bamboo swing chairs to reflect the fun and laidback atmosphere.  To showcase the brand and collection of local partners, by CHLOE. staff will wear custom aprons by Jones of Boerum Hill, hats from FairEnds, and by CHLOE. pins from Pintrill, all available for purchase in the restaurant.
