Yampa Sandwich Company—formerly Backcountry Delicatessen—just announced its new name and its plans to expand across Colorado and the U.S. through franchise partnerships. The nearly 20-year-old sandwich company will continue to serve high-quality, specialty sandwiches and salads at its five existing locations in Colorado.
“We chose our new name, Yampa Sandwich Company, in honor of the Yampa River that flows through Steamboat Springs, our original stomping grounds and the location of the first shop,” says Peter Boniface, co-founder and owner of Yampa Sandwich Company. “It’s a tribute to the town where we got our start and the adventures that inspired us to open up shop in the first place.”
“We are excited to launch our new brand as Yampa Sandwich Company,” adds Boniface. “The last two decades have proven invaluable as far as business growth and lessons learned. What has remained constant is sharing our love of food with our customers. We’re eager to grow Yampa with the help of franchise partners and bring delicious sandwiches and salads to new markets.”
All sandwiches and salads are carefully handcrafted to order from high-quality, specialty ingredients prepared fresh every day. The company is deliberate and proud of the ingredients used; the menu is packed with specialty items like capocollo, mortadella, chèvre and cranberry chutney to name a few. The shops are committed to serving good for you ingredients like hormonal, antibiotic-free meat and cheese that is sliced by hand at the stores and salad dressing that is made in-house.
“Through our franchise opportunities, we are looking for adventurous souls who want to expand our reach, bringing the same great food and atmosphere we’ve created in our flagship stores to concrete canyons, mixed-use neighborhoods and anywhere adventure can be found,” says Boniface. “We see a lot of opportunity for growth in Colorado and look forward to expansion beyond the Rocky Mountains, too.”
The shop is open for breakfast and lunch. Menu variety is plentiful and includes 20 sandwiches, four salads and eight breakfast sandwiches along with sides and soups. Some of the signature sandwiches and salads include:
- Ridgeline – Roasted turkey, cheddar, applewood smoked bacon, avocado, tomato, romaine lettuce, garlic mayo
- Summit – Black Forest ham, brie, applewood smoked bacon, cranberry chutney, romaine lettuce, chipotle mayo
- Fourteener – Roast beef, gorgonzola, sweet roasted red peppers, romaine lettuce, horseradish mayo
- Dolomite – Prosciutto, dry Italian salami, sharp provolone, sweet roasted red peppers, red onion, romaine lettuce, red wine vinaigrette
- Panzanella Salad – Artichoke hearts, tomatoes, capers, chevre, house croutons, served on a bed of field greens with balsamic vinaigrette
Yampa Sandwich Company was founded in 1999 by Peter Boniface and David Pepin, high school buddies from New England who reconnected after college in Steamboat Springs, Colo. Avid backcountry skiers and general outdoor enthusiasts, they quickly found themselves disappointed with the local sandwich scene. What they craved was a tall order—nutritious, hearty, deliciously packable sandwiches that could hang with them on their daily pursuits. Their love of sandwiches and desire to share it with others came to fruition when Yampa Sandwich Company, then named Backcountry Provisions, was opened.
