Zoës NEW Quinoa Salad incorporates quinoa mixed with carrots, cabbage, green onion, red peppers, tomatoes, and celery, sprinkled with feta and tossed with a zesty lemon vinaigrette. In combination, the ingredients bring forth crisp, fresh vegetable textures, colors and herbs that leave guests feeling satisfied with a hearty salad that has bursts of citrus notes. Quinoa is an ancient, superfood grain that is gluten-free and is a great source of iron, vitamin B-6 and magnesium. The new salad is hearty enough to be eaten on its own or with one of Zoës Kitchen’s protein choices—chicken, steak, salmon or shrimp.
