“We needed to take a step back, evaluate the profile for new franchisees, the criteria for new locations, further simplify our operation, and reduce the start-up cost," Occhiogrosso says.
Desert Moon has been working to increase operational efficiencies and value engineering the build-out of its restaurants.
The company claims its updated operating system can be successfully run by someone without restaurant experience. The new system allows guest to choose ingredients as their burrito, quesadilla, or tacos are being prepared in full view.
Occhiogrosso believes that this change gives first time franchisees an opportunity to be in the restaurant business without the cost and experience that is typically required to open and run a restaurant.
The first unit to open with the updated operating system will be in Franklin Township, NJ by year's end. Another unit is scheduled to open by the first quarter of 2009. Desert Moon seeks to attract new business owners as well as experienced food service operators of other national brands.
