“Charred avocado with Greek yogurt and pumpkin-seed purée is a must-have when visiting. It is packed with healthy fats to boost brain power and heart health, charred, and then stuffed with the indulgent-feeling purée. Pumpkin seeds add to the fun fats party here and are loaded with omega-3 fatty acids.

“Candy-cane and red beets are tossed with a toasted pistachio vinaigrette to perfectly complement the sweetness of the beets. Fragrant tarragon and chopped pistachios round out the dish perfectly. Brilliant red beets are packed with fiber and antioxidants, benefit the liver, and protect your heart from heart disease.

“Quinoa with cardamom-honey walnuts, pomegranate seeds, golden raisins, and a pomegranate molasses vinaigrette is a huge hit. We used white quinoa here. Pomegranate seeds add a fun crunch and are loaded with powerful antioxidants. Walnuts are toasted with honey and cardamom, which is called the ‘queen of the spices’ in India. Cardamom is a carminative herb, which means it helps improve your digestion and aids in the break-down of fats. Who doesn’t want that?”
